This Berry Infusion Bellini captures the essence of summer's peak seasonality, featuring sweet peaches and cooling thyme-infused simple syrup. The Brie cubes add an unexpected creaminess that harmonizes with champagne while mint leaves provide a refreshing finishing touch.

Ingredients

  • 1/4 cup Thyme-infused simple syrup
  • 1 large peach, approximately 1/2 cup Peach puree (fresh peaches)
  • 6 oz Champagne or sparkling wine
  • 4-5 cubes Brie frozen into cubes
  • 10-12 leaves Mint leaves for garnish

Instructions

  • Prepare the thyme simple syrup by combining equal parts sugar and water in a saucepan. Add a sprig of fresh thyme, heat until sugar dissolves, then let it steep for at least an hour before straining out the thyme.
  • Blend peaches with ice to create puree.
  • In a champagne flute or glass, layer the peach puree and Brie frozen into cubes (the cheese will add creaminess).
  • Pour in chilled thyme simple syrup over the mixture. Top off with sparkling wine to create effervescence.
  • Garnish with fresh mint leaves for a refreshing twist.
