The richness of coconut milk blends seamlessly with the tropical notes of pandan leaf and pineapple. A zesty touch from lime juice, a hint of sweetness from simple syrup, all brought together by the smooth finish of dark rum—a refreshing tropical escape in every sip.

Ingredients

  • 1 cup coconut milk
  • 2 leaves, tied in a knot pandan leaf
  • 1/4 cup muddled pineapple
  • 3 tablespoons fresh lime juice
  • 2 teaspoons simple syrup
  • 1 1/2 oz dark rum

Instructions

  • Muddle the pineapple at the bottom of a shaker.
  • Add coconut milk, lime juice, simple syrup, and muddled pineapple into the shaker with ice.
  • Stir well to combine flavors.
